This PR adds overlays for the StreamsHub MCP server to the quickstart.
A core + MCP and core + metrics + MCP overlay (with prometheus config for the MCP) is added along with relevant docs.
The MCP deployment files pull directly from the base kustomization in the MCP repo, rather than reinventing the wheel.
