The published packages are versioned from the release tag, so the prefix only matters for local builds; it is bumped so they agree. README gains a note that 2.0 files are not readable by 1.0.x and that there is no in-place migration. Co-authored-by: Copilot App <223556219+Copilot@users.noreply.github.com>

Bumps VersionPrefix to 2.0.0 (the release workflow takes the version from the tag; this keeps local builds consistent) and adds an upgrade note for 1.0.x users to the README. Release v2.0.0 follows once merged.
