feat: add dynamic naming to the output file

Add dynamic naming to the output file based on:

• Input fields
• Timestamp of data run

The results of this mean the output file has:

1. Unique name (no overwriting of previous run)
2. Clear list of parameters run (can duplicate a run in the future)

Currently the output name is a user-defined field. This allows the user to do any naming convention they prefer without auto-naming.

We could change the default filename to use timestamping as a name so if users don't pass in a name they want, they can do that as well.
